Jambons serrano
Nom générique qui s'applique à tous les jambons séchés obtenus à partir de porcs à peau blanche ou non-ibériques.
Désigne le jambon serrano de qualité, standardisé et garanti par le Consorcio del Jamôn Serrano Espanol. Le paramètre le plus important est l'exigence d'un minimum de 36 semaines de séchage depuis l'introduction des pièces dans le sel jusqu'au produit fini.

Jambons ibériques
Nom donné aux jambons provenant de la race porcine ibérique. Le Consorcio del Ibérico attribue des qualificatifs différents selon le type d'alimentation de l'animal.
Désigne les jambons ibériques "de bellota", standardisés et garantis par le Consorcio del Ibérico. Il s'agit de la meilleure des qualités ; ils proviennent de porcs nourris, à la fin de leur vie, avant l'abattage, exclusivement de glands.
Désigne les jambons ibériques, standardisés et garantis par le Consorcio, provenant de porcs ibériques ayant reçu, après la montanera, un dernier complément dans leur nourriture à base d'aliments naturels
II s'agit de l'appellation de jambons et palettes ibériques la plus ancienne, elle protège l'élaboration de ces derniers exclusivement dans les communes de la province de Salamanque situées en zone de montagne, parmi lesquelles se trouve Guijuelo: Cette zone jouit d'une vieille tradition dans le secteur de la charcuterie, en effet nombreuses sont les entreprises, fondées par des Castillans arrivés de cette région, qui sont ensuite apparues en Estrémadure et en Andalousie. Etant donné que le processus de salaison est accéléré grâce au climat sec et froid plus favorable à cette maturation, les jambons sont généralement un peu plus onctueux et plus doux que ceux des autres zones du sud, puisqu'ils restent moins longtemps dans le sel de mer.
Cette appellation comprend, en tant que zone d'élevage de porc ibérique, toute la communauté d'Estrémadure, et pour l'élaboration de jambons et palettes, une série de communes situées dans les zones montagneuses. Il s'agit de la région comportant la plus grande concentration de bétail ibérique.
Cette appellation d'origine englobe les jambons élaborés dans quelques communes de la zone Sierra de Huelva, parmi lesquelles se trouvent, en plus du célèbre village de Jabugo, Aracena, Cumbres Mayores, Cortegana jouissant d'une vieille tradition dans l'élaboration de ce produit.

Parfois, de façon peu rigoureuse, on emploie vulgairement ce nom pour désigner généralement le jambon ibérique. Il correspond en réalité au nom d'une localité jouissant d'une vieille tradition dans l'élaboration de ce produit. Elle n'est pas elle-même une D.O. bien qu'elle fasse partie de la zone d'élaboration de la D.O. Jambon de Huelva.
Terme employé vulgairement pour désigner le jambon ibérique en général
